Tortuga Rum Cake
I had first tasted this cake at the store in Key West. In fact, I tried every flavor of the free samples they had available. For years, I have wanted to order one of these cakes, but the minimum order from the Tortuga catalogue was more than I wanted to deal with. Besides that, the shipping and handling was quite high. When I saw the cakes available through Amazon, I still thought they were pricey, but super-saver free shipping was available, so I ordered two cakes, one for my family and one for a friend. The cake did not dissapoint. It was delicious, moist and delicious, and the rum was not overpowering. By eating just a sliver at a time, my husband, son, and I made the 16oz cake last nearly a week. It was a nice holiday treat.

A great specialty cookbook
I got this book for Christmas and have already made several recipes from it since I had places to go and people to feed! It's well organized, although lacks an index, a feature which would make the book easier to use (I've already written cake titles & page numbers for two things I made that are not specifically noted in the TOC). I've actually read the entire book and it's an amazingly well-rounded specialty book. My only criticism, besides having no index, is that you need to read a recipe carefully before getting started. There are several recipes with obvious errors (such as the flourless pound cake that includes direction that says 'mix in flour'). This would make a good gift for the cake baker in your life...I've loved mine!

I love cake, have been baking many years, and was very excited when I discovered this book. So much so, that I purchased a couple of new pans with the intent of baking a new cake (or two!) a week. The book is well written and organized (despite a few editing glitches), and provides great information on the basics, as well as helpful tips (the same tried and true ones I've learned over the years).I never like to review a cookbook or craft book unless I've tried to make a few things first. I made several of the cakes (most recently the pear cake and the yogurt cake) and they came out just fine - as expected. However, the author's suggested ingredients of unbleached flour, and cornmeal for some, just didn't produce the kind of cake I personally like most. Reduce the mixture speed to low, add one-third of the flour mixture, then half of the sour cream mixture.
